Fermenting/Fomenting

Dissent is, uh, brewing over at The Brooklyn Kitchen.

I’ve been thinking about Vinegar. To me it’s another interesting fermenting foodstuff but I never had access to a “Mother” to get a batch going, and have a lot of other projects (Pickles, cider, canning) to keep me busy.

You can get one going by buying the bacteria and then adding wine, if you find one in your vingear bottle you can get started that way.

Great. This is just one more obsession for Harry, and one more vat of fermenting/fomenting muck lying around our basement. It’s getting ridiculous. I went downstairs to look for a lightbulb the other day, and I literally tripped over one of the two 5 gallon carboys holding cider in various stages of “improvement” and into the 6 gallon crock filled with sauerkraut. Luckily, my fall was arrested by the gentle cushioning my head felt when it impacted the drying sausages hanging against the wall, but my hand landed quite sharply into the gauge of the 18 qt pressure canner. Oh, the glamorous life of the food nerd.
